To those of you how might be celebrating Thanksgiving -
I am baking pies :)
So far, we have the traditional Pumpkin Pie, followed by a Southern favorite - Sweet Potatoe Pie (with a carmalized walnut topping); Third is another holiday favorite is Pecan Pie. Our Fourth creation is a traditional Apple Pie, made with Granny Smith and Red Delicious apples. Number five is Lemon meringue (my meringue did not reach its normal loft peak) and finally - yes people - I have made SIX Pies - Chocolate Cream pie- cuase my kids have never had one :)
So - Tomorrow is the bid day - and we are gonna eat some pie !!!!!!!

99+ day(s) ago | I`ve been a long time lover of the lemon meringue, which my fiance learned to cook just for me :D so family events on my side generally feature one or two from her. Next is apple, which I also love, not sure which apples she uses, and those she`ll make for both families, she also generally makes raspberry for her family, and pumpkin for both, of which, both families love them so much, I still haven`t tried it, lol, I`m usually too busy concentrating on the lemon and apple :P |

Basic pie dough: 1 + 1/4 cup flour, 1 tablespoon sugar, dash of salt, mix together, cut in 1/2 cup butter until the size of small peas, then add one egg yolk and 3 to 4 tables spoons of really cold water, fold all together to form a ball, if too dry add more water.
This is enough dough for a single crust pie (double it if you need a top crust.
pretty much everything else is scratch, I bake my own pumpkins, apples etc!!
My favorite of all time is Blackberry, which grows wild in my parts and is in season in late summer and early fall. Apple is a close second :) |

My fiance buys from scratch, usually makes me do everything not involving the actual cooking, lol, only thing she`ll buy is pumpkin pie filling, everything else she likes to make, it`s crazy, and she works her rear off, but it does make very good tasting pies. |

99+ day(s) ago | lol that`s why I have a fiance who loves cooking, especially pies. The clean up she makes me do, and it`s brutal, since she somehow uses most of the dishes at her house when she cooks, but the end result is so worth it. Darn it Deathroe, now I`m drooling, and it`s all your fault, too bad Canadian Thanksgiving is already long past. |
