How can i quit my account on a specific server, not the account itself?

Not sure what you actually mean, so I will answer several of the possible things you wanna know...
1) You cannot delete your account. If you want to stop playing a server, simply go inactive on that server and it will eventually be deleted.
2) If you want to reset your account, go into (along the menu at the top of the screen) Options --> Restart Empire.
