Mining infrastructure researched will also increase the rate at which you get ore from planets, though generally only pure strip miners or mineral miners research any mining, and it isn`t advised to research any unless you happen to be one of the aforementioned..
You can also buy ore from the market =S Though tis very expensive.

build mining on colonies that have ore, and as you use turns, you will gradually take the ore off a planet. the more mining built, the faster it will go. you can cluster planets together and just mine them all at once, that might make it go faster.
