so i completed research for Small Composite Hull.
which Allows building of fighter & corvette class ships
but the only ships available to build are scouts and fighters.. [and i already had the fighters]

Well, they are in order depending on the research type. Notice the in the second column of that list on the manual how it has `Ship hull`, `Ship Class`, `Planetary`, `Technology`, and alien types. It will just take time to get the feel of how things work but just use that page as a reference.

The Terran destroyer requires the `Large Terran Hull`, however you will need to research the small and medium terran hulls first.

Correction, the `small composite hull enables` the `light fighter drone` class ship and also the `medium composite hull`. But you get the idea..lol

it would be great if there was like a research tree showing what you have to research to enable research of something else.
like what research is required in order to enable research of the terran destroyer.

You have to complete separate research also for the different class types. The hull research only enables new ship research. For example, you will need to research this next for the corvette class:
